Baja Chicken Pizza

My husband said this was the best pizza that I have ever made! 

 For Pizza:
2 Chicken Breasts, cooked and shredded (I found, that an easy way to shred chicken is to use your stand mixer on a low speed. It shreds the chicken just the right amount)
1/2 cup ranch dressing
1/2 cup salsa
1 tablespoon lime juice
1 tsp. dried cilantro
1/2 packet of taco seasoning 
1 tomato, chopped 
2 cups Monterey jack cheese
1 avocado, sliced and chopped
Olive oil 

Crusty Pizza Dough
1 package active yeast
1 cup warm water
1 tsp. salt
2 tsp. olive oil
3 1/2 cups flour

For Pizza Crust: 1. Dissolve yeast in warm water in mixer bowl. Add salt, olive oil and 2 1/2 cups flour. Using dough hook, mix on speed 2 for 1 minute. 2. Add remaining flour and continue to mix until dough clings to hook and cleans sides of bowl. Knead for 2 minutes longer. 3. Place dough in greased bowl, cover with cloth and allow to sit for 1 hour. Once dough is double in size, punch down dough. (Recipe from Kitchen Aid)


1. Preheat oven to 450 degrees. Prepare pizza pan with nonstitck cooking spray. Roll out pizza crust onto pizza pan. Press dough down and form crust around edge. Poke with fork. Brush thin coat of olive oil on crust before topping.

2. In small bowl, combine ranch dressing, salsa, lime juice and cilantro. Mix until well combined and smooth. In another bowl, combine shredded chicken and taco seasoning, evenly coat.

3. Spread ranch/salsa sauce onto pizza. Cover with chicken mixture and tomatoes. Top with cheese. Bake for 15-20 minutes at 450 degrees. Top with avocado slices.

Pepperoni Pizza Bread

On Friday night, my husband & I went to the commissary in search of something for dinner. What should of been a quick in and out stop turned into about an hour long shopping experience as the lines at the commissary were outrageous! The base that we are currently at is much bigger than the one we just moved from. It's great to have such a large selection of food but at the same time, I miss the convenience of a small store.

This dinner can be quickly thrown together and takes around 10 minutes from start to finish! Perfect when you are in a rush or just want to make something easy for dinner!

6 slices of semolina bread, around 3/4 to 1 inch thick
1 can organic pizza sauce
1 1/2 cups shredded mozzarella cheese
18 slices pepperoni

1. Preheat oven to 400 degrees. Line baking sheet with aluminum foil. Place bread slices on aluminum foil and bake for 4 minutes. Remove from oven.

2. Spread pizza sauce on bread, around 2 tablespoons of sauce on each slice. (You will not use the entire can of pizza sauce unless you have a small can) Top with cheese and pepporoni.

3. Bake for 5 minutes at 400 degrees. Remove from oven and enjoy!

BBQ Chicken Bacon Pizza

Friday nights for us typically consist of homemade pizza and a movie. Back when we first got married, we would make frozen pizzas on Friday night. It wasn't until we went to one of my best friend's houses that we started making homemade pizza after being served the most amazing homemade pizza from her step-mom. Homemade pizza has become a staple at our house. Typically it's pepperoni pizza but this week, it was BBQ chicken bacon pizza. I absolutely love BBQ sauce. I could eat it by the spoonful. Little did I know, my husband has a love for BBQ sauce as well.

1 chicken breast, cooked
3 slices of bacon, cooked
mozzarella cheese, cover pizza to your liking
1 cup BBQ sauce plus a few tablespoons for the chicken
1 teaspoon cilantro 
Pizza dough

1. Preheat oven to 450 degrees. Coat pizza pan with nonstick cooking spray. 

2. Roll pizza dough on prepared pizza pan. Spread sauce evenly over dough to within 1/2 inch from edge.  Cover with mozzarella cheese. Cover chicken will remaining BBQ sauce. Evenly spoon over chopped bacon and chicken. 

4. Bake at 450 for 18 minutes or until lightly browned. Remove from oven.

Pizza Fondue

Want to impress your friends at your next potluck? Try this easy, gooey, sharable treat!

2 cans condensed cheddar cheese soup 
1 can (8 oz) pizza sauce
1/2 c. milk
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. crushed red pepper flakes
1 1/2 c. shredded pizza cheese
1/2 c. chopped pepperoni
Italian bread, chopped into cubes

In a large saucepan, combine the first 6 ingredients. Add cheese and pepperoni; cook and stir over medium heat until cheese is melted. Transfer to a fondue pot to keep warm. Serve with bread cubes.

Spicy Chicken Pizza

1 recipe Pizza Crust
2 chicken breasts, cooked and shredded
1/4 cup Onion, diced
1 Red Pepper, diced
1/2 cup Mild Salsa
1 block of Pepper-Jack Cheese, shredded
1 teaspoon dried cilantro




1. Preheat oven to 425 degrees. Grease pizza pan with cooking spray; set aside. In a skillet, saute onions and red pepper until tender. Remove from heat and add salsa to vegetables.

2. Roll out pizza dough; poke with fork. Spread pizza dough with salsa-veggie mixture. Top with shredded chicken and cheese.

3. Bake for 15 minutes until cheese is melted.
